HOW WE BREW

1. Malted barley is selected to reflect a particular beer style. Two-row Pale and Lager malts make up 80 percent of the total batch and the other 20 percent comes from the Coloring malts (Crystal,Caramalt,Roasted,Chocolate...etc).

2. In the Mash tun, water and grain are mixed together at about 152 degrees. The grain then sits for 1 hour, converting starches to fermentable and unfermentable sugars. The liquid now called "Wort" is then pumped from the mash tun to the kettle.

3. Once the Kettle is full the wort is brought to a rallying boil. Hops are added at different stages according to the particular style of beer. The wort is boiled one to two hours depending on the beer style, hops are boiled no more than one hour. If it is a two hour boil time, the hops are added at the start of the second hour.

4. Before the Fermentation Process can take place the wort must be chilled from it's boiling temperature to at least 70 degrees. In the Fermentation tank, yeast is added to the crash-cooled wort and fermentation begins. Fermentation takes anywhere from 5-7 days for Ales, and 2-6 weeks for lagers.

5. When the fermentation is complete the temperature of the beer is then crashed to 36 degrees where it will sit until it is time to transfer the fresh Beer to our serving tanks. These serving tanks are essentially huge 215 gallon kegs. It then goes straight to the taps. Enjoy!

What is the Zend Optimizer?
